What do you get when you combine a beautiful new development, prime real estate, a chef driven concept with fresh ingredients and a proven menu?
Cantina Laredo is what you get.
Cantina Laredo is the new restaurant that opened this week at The District. The District at Eastover is a sparkling new development just south of Highland Village along Eastover Drive in Jackson.
I’d been to another Cantina Laredo location before, in Sandestin, Florida. We love going there when we’re in that area – along with several one-of-a-kind spots in that general area. It’s a chef-driven concept with several locations.
The concept features a spacious interior along with a private dining space with a massive TV. Outside there’s a gorgeous, air-conditioned patio (heated too, but let’s not talk about that in August…). I liked the fact that the bar actually has a pass thru to the patio, so drinks can happen pretty quickly if you’re dining outdoors.
Jackson’s Newest Tex-Mex Chef
Last week, I had the privilege of visiting with Chef Scott Kyser, the chef who’s opening the new Jackson location. I asked Chef Kyser what his personal favorite was on their menu, and he showed off – and intrigued our Facebook audience who watched – with the Camaron Poblano Asada. This dish is a grilled skirt steak swaddling a roasted then peeled poblano pepper. All of this is stuffed with shrimp, mushrooms, onions and a healthy dose of Monterey Jack cheese on a bed of chimichurri sauce.
I love the smokiness of poblano pepper – a one-of-a-kind flavor that is mellowed to perfection in the roasting process. Pair that with some more of my favorite accoutrement: shrimp, cheese, mushrooms and onions, and this dish was the perfect marriage of warm, spicy flavor without piercing heat. The steak was cooked to medium rare and was fabulously tender. The red meat creation was nestled alongside some seasonal veggies – that will change with the seasons, of course. Currently they are squash. The cilantro lime rice was fresh and had a ‘punch you in the mouth’ burst of flavor. Definitely a winner in our book.
We also tried the salmon which was cooked perfectly. I literally tasted it with a spoon, and let me tell you… no knife needed for that dish. It’s perfect.
Did Someone Say Brunch?
Cantina Laredo will present a massive brunch offering complete with mimosas, Bloody Mary’s and all the fixings. Their margaritas are made from fresh daily squeezed limes and Chef Kyser seems to have a team in place well equipped to service the large restaurant.
Now Open at The District
Cantina Laredo is now open Monday through Thursday from 11 a.m. to 10 p.m. and Friday through Saturday from 11 a.m. to 11 p.m. and Sundays from 11 a.m. to 9 p.m. The restaurant will begin taking reservations in September.
