The news came soon after The Westin Jackson announced on Facebook the appointment of Executive Chef Matthew Kajdan, formerly at Parlor Market, to lead the hotel’s culinary efforts and run its Estelle Wine Bar & Bistro.
Effie Kappis Hubanks, Mike Greenhill, Lauren Rushton and Robert Rushton will be the Emersons’ partners in the venture, Jennifer Emerson said, adding “We hope we can add our mark on this already wonderful business. We have met with the staff and we are really excited to join them downtown!”
The Emersons also own Local 463 Urban Kitchen in Ridgeland and CAET in Jackson. Derek Emerson said they’re bringing in chefs Mike Greenhill from Walker’s and Robert Rushton from Local 463 and, “We’re all going to do it together. Those guys have been with me for years.”
They may tweak Parlor Market’s name and menu a bit to put their signature on it, Derek Emerson said. The move happened quickly and plans are still in the preliminary stage, but Parlor Market should stay as it is for a couple of months, and Kajdan will be taking signature dishes with him to the Westin. “He’s done a great job with it,” he said of Kajdan’s Parlor Market tenure.
