It was late on a Friday afternoon. It had been such a busy day that I’d not even thought about what my husband and I were going to do for supper. He had plans to leave town shortly after he got home from work (to go hunting), so we wouldn’t have time to eat out anywhere.
Then an idea hit me over the head like a ton of bricks! (And I’m doing fine now that I’ve had time to recover, thanks for asking!) Why not run by Primos Cafe and pick up some of their frozen casseroles? “That’ll be so easy, and I know the hubby would like the food,” I thought to myself. (He loves every business the Primos family ever started… He’s an avid hunter and eater!)
I ran by the Primos Cafe on Lake Harbour in Ridgeland, and I grabbed a Chicken and Penne Bake as well as a Broccoli Au Gratin casserole. I was impressed with the simple list of ingredients in each dish. The Chicken and Penne dish had chicken, three veggies, two types of cheese, pasta, butter, cream, and spices. That’s it! And the broccoli dish was even simpler. Even though the ingredients weren’t the healthiest, it made me feel good that I wasn’t eating anything over-processed. This was just good ol’ food made from family recipes!
When I returned home with these items, I followed the directions on the containers:
1. Remove lid and microwave until heated thru. That part took about three or four minutes. During that time, I started the oven pre-heat process at 350 degrees.
2. The directions call for transferring the food to casserole dishes and baking for 20-30 minutes. I baked mine for closer to 30 minutes if my memory serves me correctly!
3. I pulled the casserole dish out of the oven just minutes before my husband came through the door. “Wow, it smells good in here! What ya cookin?” Yes, we are off to a good start, just as I predicted!
I plated the Chicken and Penne and the Broccoli Au Gratin and proudly served it as if I’d made these dishes from scratch. I actually was pretty proud that less than an hour before, I had not even had an idea what I’d be serving for supper. This was a good moment for me.
As we enjoyed our supper, I kept hearing comments like, “If you wanted to serve this once a week, I wouldn’t complain,” and “Where did you say this came from again?” and “This is the best cheesy broccoli ever. No offense to stuff you’ve made in the past.”
This meal was a hit, to say the least. Not only was it easier than easy for me to purchase and prepare this supper, it was flavorful and fresh tasting, in keeping with the Primos Cafe standard.
Primos Cafe has frozen dishes of all sizes and types, so even if you don’t like Chicken and Penne or Broccoli Au Gratin, you can choose things like Green Bean Casserole, Chicken Artichoke Casserole, Red Beans and Rice, Mac and Cheese, and so much more! They also have a fantastic array of desserts from their bakery!
Both locations of Primos (Lakeland Drive in Flowood and Lake Harbour Drive in Ridgeland) are open Monday thru Saturday from 6:30 a.m. until 9:00 p.m.
