Power Lunch: Our Dish with Leigh Reeves

The perfect way to begin this meal!

Editor’s Note: Every month or so, we like to do something called Power Lunch where we take a really cool person in the Jackson area out to lunch at the place of their choosing. This month, our sales girl, Lauren, and I, Mrs. Jackson, thought it would be fun to take Leigh Reeves out for some food and conversation! With Mistletoe Marketplace right around the corner, we hoped Leigh could tell us a little about this year’s event! But we also got a surprise healthy tip from Leigh, too.

Lauren and I met Leigh at her favorite Mexican joint, Taqueria La Guadalupe in Ridgeland. La Guadalupe is an Eat Jackson favorite, so I knew well in advance that this was going to be a great lunch.

Lauren and I were waiting at our table stocked with chips and salsa when tiny little Leigh Reeves walked through the door looking as stylish as ever!

Here are Leigh’s Veggie Tacos (with only one avocado slice!)

After greeting one another, we got down to the business of ordering food. Lauren and I each got three Pollo Tacos (pollo = chicken) on corn tortillas, loaded with cheese, lettuce, cilantro, tomatoes, and—the best part—sliced avocado! (I admit. I’m stuck in a rut. I can’t seem to order anything except their seriously amazing chicken tacos!)

Leigh ordered a trio of veggie tacos, fully loaded, but with only one thin avocado slice instead of three! Then she started talking about how much she loves avocado. So why’d she get only one little slice?!

That’s when she told us that she has high cholesterol. (She did give me permission to write about this, by the way!) I was really surprised to hear this, seeing how she’s probably one of the skinniest people I know… She said her doctor gave her a long list of things to try to avoid when eating, one of which was meat and another was…. avocados!

Now her veggie order makes sense! She kept calling her one little slice of avocado her “treat for the day.” Too funny!

She also talked about how surprised she was to find that her cholesterol was something she had to keep a close eye on. She said even naturally small people, like her, can be at risk…

Amongst our chat about food, nail polish colors, and…cholesterol was also talk of Mistletoe Marketplace!

Mistletoe Marketplace is an annual event, hosted by the Junior League of Jackson, that few Jackson-area shoppers miss. (If you’re not familiar with Mistletoe Marketplace, check out their website.) Leigh is the Mistletoe Marketplace Silent Auction Chair this year, which has kept her very busy. She also has a business, Snapshot Publishing, which published Simply Sparkling, the complete guide to all things Mistletoe this year. Snapshot also did a mobile version of the publication that allows smart phone users to pull up Mistletoe details on the go… or while shopping. Very handy!

Leigh said she’s excited that Mistletoe is finally here! She talked about how great it is to see people and businesses coming together to help the Junior League raise money to benefit their many causes. Her favorite part of the actual event is the Preview Party, which is usually the Wednesday before the Thursday shopping madness begins. “I love seeing everyone all dressed up and in the same room! It’s a great time to catch up with people I don’t get to see very often. And I love the atmosphere and the beautiful decorations…”

We totally agree! Eat Jackson certainly had a fabulous time at this year’s fantastic Preview Party!

The most important dish from Leigh today… Taqueria La Guadalupe makes outstanding heart-healthy Veggie Tacos!
